Making Quesabirrias with Kitchenware from Mesa Mia by Jenny Martinez

It’s not everyday that I get to meet and share space with a TikTok sensation that has millions of followers.

But that’s exactly what happened last month at the Las Mamacitas Wellness Mixer where I was invited to be a speaker. I shared the stage with incredible mujeres, including Latina home chef, Jenny Martinez, whose fun and unique personality has won millions of followers and supporters on social media.

Jenny frequently shares delicious recipes and stories about her family and her Mexican culture. Plus, she gives even the most inexperienced cooks (like myself) a reason to feel comfortable in the kitchen and tackle recipes we love, with simplicity and ease.

Clearly, the corporate world took note of Jenny’s talent because JC Penney came knocking at her door with a wonderful partnership opportunity— A beautiful kitchen & dining brand: “Mesa Mia by Jenny Martinez”.

I received a gorgeous platter and a beechwood stirring spoon with silicone spatula as a gift. Then I headed off to JC Penney and purchased non-stick fry pans, knives and a cutting board. My goal was to get everything I needed in order to make Quesabirrias.

Ingredients:

Pre-made birria (I bought some at Trader Joes)

Corn Tortillas

Cilantro

Onion

Monterey Jack Cheese

Cooking Oil

Green Salsa & Lemon.

These were rather easy to make and even better using kitchenware and cooking utensils from Mesa Mia!

Here is how I made these…

In one pan, heat up the birria for transfer to the tortillas.

Note, I don’t have exact measurements for the cooking oil but on the second frypan, I started by heating a little bit of cooking oil to lightly fry the tortillas and allow the cheese to melt. (I like to drench the tortillas in the birria juice first, before transferring to the frypan).

Once the cheese is starting to melt, I used the Mesa Mia beechwood spoon to transfer the birria over the cheese. Then I carefully added the cilantro and onion before folding the tortilla in half to make the tacos.

Once the quesabirrias were ready, I placed them on my gorgeous Mesa Mia platter and added lemon and salsa. They turned out soooooo delicious. Paul and the boys ate at least four each! You can serve with beans and rice and I would suggest you enjoy with an ice cold coca cola!
